Vegetarian Hipster Hash

For an awesome veggie-protein packed breakfast this is definitely on the top of my list! A friend of mine had given me a recipe of her version Fleetwood Diner’s Hippie Hash which consists of:

1 cup chopped Broccoli crowns
1/2 large Red onion
3 medium Diced tomatoes
1 large sweet potato – shredded

My version follows the same recipe, but also includes approximately 1 cup chopped kale leaves and a little bit of garlic salt. I love it!!!

I haven’t made any official measurements, but I’ve estimated that the above ingredients contribute to about 6-8, 1 cup servings.

All of the ingredients chopped and stored in an air-tight container will be enough to last throughout the entire week!

To prepare, heat a bit of olive oil in a pan then add about 1 cup of the veggie mix. Stir fry for about 8-10 minutes, adding the garlic salt. At the very last few minutes, break an egg into the mix and cook until done! That’s it!!
