Mini Pot Pies!

So last week during Thanksgiving I decided to make my own vegetarian dish while everyone else was going on and on about their turkey!  🙂

I had noticed a recipe for plant based pot pies here on plantbasedonabudget.com and was dying to try it!  OMG – these are amazing!  Instead of frozen vegetables I already had a can of mixed veggies in the pantry so I used those along with the simple gravy and pillsbury crescent rolls.  I could not believe how easy these were to make!

And I have to admit, I was skeptical about the gravy at first.  I followed the recipe for the gravy except I substituted butter for the vegetable oil since that’s all I had.  SO GOOD!!  You have to give these a try – I plan on trying this recipe with a homemade pie crust.  I bet it will be over the top DELISH!  🙂
